First of all, nikah is actually the first thing you need to do if you are marrying a Muslim. But as both of you have finally decided to do it, then ask forgiveness whole heartedly from Allah and proceed with your nikah as soon as possible, as up to this point both of you are not considered to be husband and wife. The best thing for both of you is to refrain from doing anything than husband and wife is allowed until you finish your marriage ceremony (according to Islam that is). May Allah guide both of you and show you the true way.

Probably when your Muslim 'husband' decided to marry you, he consider it right to marry a Christian woman based on the following Quranic verse;

Surah Al-Maidah (Chapter 5) verse 5;

(Meaning)

5. Made lawful to you this day are At-Tayyibat. The food of the People of the Scripture is lawful to you, and your food is lawful to them. (Lawful to you in marriage) are chaste women from the believers and chaste women from those who were given the Scripture before your time when you have given them their due, desiring chastity, not illegal sexual intercourse, nor taking them as girlfriends (or lovers). And whosoever rejects faith, then fruitless is his work; and in the Hereafter he will be among the losers.

Lawful to Muslim to marry women from those who were given the Scripture (Christians and Jews), that is those woman who believed in God and do not practise polytheism or idol worshipping, although they are not Muslim yet in practise. And they refrain themselves from wrong doings (illegal sexual intercourse etc.) as told to them in their scriptures.

But there are women from the People of the Book who do not practise their religion anymore, practise Shirk (polytheism) and indulge themselves in wrong doings. The best is to avoid to marry this kind of woman, same as it is better to avoid marrying 'Muslim woman' who do not follow the teaching of Islam.

Based on this verse also, your 'would be husband' should give you your due, that is mahr (mandatory wedding gift as agreed by both parties).

As for the nikah, it is a simple wedding vow that your husband agrees to marry you, and you agree to it beforehand. It should be conducted by your wali (your father or if not available your brother and so on - if they are Muslim of course) and witnessed by some truthful person. If you do not have any Muslim wali, then a Muslim judge or imam will normally conducted the aqad nikah.

If you encounter other customs or rules during your nikah perhaps it is merely a tradition or rules set by an authority that is normally practice at the place you are residing. As long as they do not contradict Islamic practices then they are lawful.

If you are concern about what to wear during the ceremony, normally Muslim woman, based from the teaching of the Quran will cover their 'aurat', that is body part to be covered. It is their whole body except for their face and palm. As for the colour or fashion there are no restriction as long as it is modest and beautiful for your husband to see. This is the best for you. But if you are not comfortable to cover your hair now (as some women are), then wear anything modest and proceed with your nikah.
References :
During the Nikah you both consent to the marriage, in the presence of witnesses. Sometimes they read the Fatiha (some verses in the Quran), and you sign the proper forms. I'm surprised that he didn't perform it yet, because technically you're current marriage is considered invalid in Islam. There's no specific colour you have to wear, as long as it's modest.

*Keep in mind, some things may be different, since it varies between different Islamic cultures
References :
Peace be unto you,

Na! Nikah doesn't required any dress or anything. Just an agreement that you want to marry him & you are belong to People Of The Book (Jews & Christians). There is nothing like Christian celebration (i.e kissing etc) just a simple thing with agreement.

But also Islam says that the believer women are better for you in People of The Book means they should worship one God alone (Father in Heaven) not Jesus, Not Mary, Not Holy Ghost, Not Ezra etc. If you are agreed with all terms so you are very welcome to become his bride.

Between CONGRATULATIONS!
